Cauliflower Flatbread Shawns
6 Servings
1 Large Cauliflower
2 Cup mozzarella, Shredded
2 Large Eggs
1 Tsp Garlic
1/2 Tsp Onion powder
1/2 Tsp Italian seasoning
1/2 Tsp Salt
1/2 Tsp Pepper
1 1/2 Tbl Pesto sauce
Preheat oven to 450f
Coat a baking sheet with cooking spray, place cauliflower in a bowl
and nuke for about 5 mins (until soft); let cool slightly (so you can
touch it). Place cauliflower in food processor or blender and
process until it reaches the consistency of mashed potato.
In a bowl combine cauliflower, 1 cup cheese, the eggs (lightly
beaten), garlic, onion powder, seasoning, salt, pepper until well
mixed.
Spread mix in a 1/2 inch layer on baking sheet, top with remaining
cheese and drizzle with pesto sauce. Bake 20-25 mins ot until
golden. Cut into peices like a pizza and server immediately.
We also like to top this with slices of tomato, peperoni, etc,
basically making gluten free white pizza.
